Here's how the chef-athlete gives a healthy, classic meat-and-vegetable combo an unexpected Southeast Asian flavor twist.

They are using sriracha, one of the trendiest hot sauces that goes good with anything. You can also use your own preferred hot sauce, if sriracha is not to your liking. They are have added yellow mustard to the hot sauce, to give it a more dynamic taste, and you’ll be getting sweetness from either raw honey or maple syrup, whichever one you choose to go with. She’s garnished it with cilantro, but also mentions that you can use parsley or basil, whichever suits your taste better.

Kirsty, with animal protein I’m a pretty picky. I buy at butchers where I trust in the quality. In my opinion there is a huge difference in taste and quality when it comes to animal protein. Grains and veggies I’m more lenient but never with animal protein. The cheapest way to get high quality meat is share a whole animal with friends or neighbors. The bacon we eat is from a pig I share with another 2 families. Once a year I get 1/3 and freeze it all. The bacon is incomparable to any grocery store bacon. I’d rather it less often.

These stuffed peppers are using sweet peppers so they are not spicy, and they are stuffed with goat cheese, which does not contain as much lactose as cheese made from cow’s milk. They say that you can use a different cheese if you do not like goat cheese, and with the cheese question you’re going to have to come up with your own answer as to which kind you are going to use while you are eating Paleo. If your body responds well to eating cheese, you’ll be able to have it more often than someone that can’t process it.
1. Crispy Plantains With Garlic Sauce: A staple of Caribbean cuisine, plantains are delicious fried or mashed. Ripe ones look similar to bananas and can be used in sweet dishes, while green ones mash and crisp up nicely. In this recipe, green plantains are parboiled, smashed and pan-fried, so the center remains soft while the edges provide crunch. The accompanying garlic-lime dipping sauce is sinfully delicious. These pork chops are made on the grill, so they are going to seal in all of the delicious grilled flavor. Plus they have added a nice mustard coating on it, so you’re going to have a bit of spiciness here as well as the flavor from the pork. They topped it off with basil apricot relish so there will be a sweetness to balance out the mustard, and sweet fruits like apple sauce are often paired with pork chops because they simply go really well together. You’ll want to make sure that you get a vegetable with this. It’s nice to have some fruit with it, but vegetables get top rank along with meat.
