I went on Saturday morning and I excitedly told the young girl about finding your blog. The owner was out at the farmers market. I got the chicken salad wrap….delish! I purchases the paleo wraps and can’t wait to make my own this week. I am new paleo….I’ve tried many ways of eating…from raw to lord knows what. I’m 56 in pretty good health but have a bad hip. I need to loose about 20 pounds and want to do it healthfully and have the weight stay off and this be a lifestyle. I’ll be following your blog and maybe I’ll see you at Vive!

FYI, The Paleo Kitchen cookbook has a mayo recipe that is SOOOO much easier…you take 3/4 cut oil of your choice, 1 egg, lemon juice(1 tsp I think), and 1 Tbsp Dijon mustard, place them in a tall, narrow container, and use an immersion blender! Start at the bottom and move the blender upward as the ingredients emulsify. I had quit making my own mayo because the other way was SO time consuming and mine never seemed to come out right, but this version is pretty fool-proof! I use grapeseed oil because the olive oil is a bit bitter for me.

Now, this doesn’t mean that the book only uses 15 ingredients. Instead, those ingredients act as bases for the recipes and are expanded upon. So, you will still need some other ingredients.
This book has seem excellent hard to find recipes for paleo soups/sauces. These recipes use ingredients that should be acceptable to most paleo dieters (unlike other books that use sugar,flours,and other debatable ingredients. The downside to this book is that it is short and spends a decent amount of time talking about fruit smoothies that are too high glycemic for me.

My dad was a major reason I went Paleo, and we keep each other on track in all aspects of health! About your question, this mayo is definitely tastier and healthier than store bought mayo. I absolutely despise regular mayo, and I love this recipe. If you aren’t a big fan of chicken salad, this might not be the first recipe to start; although the flavor is pretty mild. I have looked through many Paleo cookbooks and this one has become my favorite! Many paleo cook book recipes use a lot of expensive ingredients and are time consuming. This book os not like that. I have tried many of the recipes and they are delicious! Sometimes I do not have much time to spend in the kitchen and this book provides recipes for those who live very busy lives. I highly recommend this book!
