I had never heard of the Paleo diet before I read this book but as a Mexican Cookbook it is really good. There are the recipes you would expect to see - empanadas, enchiladas, fajitas and such plus many recipes I have never seen before. There are lots of yummy looking recipes that I will be trying out. I am especially looking forward to trying the Salted Chocolate Ganache Tarts!

When I first stumbled across his site, I remember telling you all that his recipes were for the man's man. They are also incredibly useful for the gal whose husband is getting sick of salads and things that don't fill him up, like myself! I lack a lot of hearty dinner recipes on my site, and especially lack  grilling recipes – all of which George is the master of. This recipe is inspired by Indochina cuisine and features chilli chicken that gets marinated in a special blend of spices. The red chillies are going to give this a pretty good spiciness to this dish, so if you don’t like spicy foods you may want to pass on this one, or make adjustments to the peppers, using ones that aren’t as potent. It’s served on a bed of cauliflower rice to keep it Paleo friendly. You’ll find that cauliflower is a versatile way to make rice and couscous replacements, and it satisfies your vegetable requirement.
These tiny tacos are served up on jicama shells. The rest of the ingredients are placed in the slow cooker until the meat is just right. Even though these have been dubbed “finger lickin’” Colonel Sanders has nothing to do with these. That’s because they’re not made with chicken, but with beef. They pack a bit of a kick because of the chipotles used, but not so much that it overpowers the other ingredients. There are plenty of Paleo ingredients used, both in the meatballs, and in the sauce. You’ll find tasty items like coriander seed, garlic, paprika, and bay leaves. You’ll find that the Paleo diet is not very restrictive, it’s just a matter of finding the right mix of spices and seasonings to make the food taste as good as it can.


Here’s another paleo recipe that’s easy to put in a single-serving container and bring along for lunch.
