Chicken Curry Salad Ingredients: - 4 chicken breasts - 2 cups green grapes - 1/3 cup Paleo Mayo - 1 heaping tablespoon curry powde...r - 2 heaping tablespoons honey (or more!) - 1/2 cup slivered almonds - Sea salt (to taste) - Black pepper (to taste) Steps: 1. Cover your baking sheet with aluminum foil. 2. Set broiler on high, arranging rack so that the chicken will be about 2 inches from the heat. 3. Rinse your chicken breasts and cut off any excess fat. 4. Place chicken breasts side by side on baking sheets. 5. Sprinkle sea salt and pepper, to taste. Place chicken in oven and broil for 14 minutes. 6. Carefully flip each chicken breast, and place back in oven for it to continue to broil for another 14 minutes. 7. Once chicken cools off, grab your sharp knife and cut all four chicken breasts into small squares. 8. Place chicken, grapes, and slivered almonds in your mixing bowl; using your wooden spoon, mix them together. 9. In a separate bowl, mix your Paleo Mayo, honey and curry powder. Here's a recipe that plays on Thai cuisine’s marriage of sweet and salty flavors, but in a purely paleo, sugar-free way. Microwave for a hot lunch, or enjoy it cold, as you would a meat-based salad. Pork is a fatty meat, although the fat content varies by cut. Be sure to choose a lean cut, which will get you a good amount of protein, as well as vitamin B12, which supports nerve health.


The main limitation to mention is the layout. Thanks for the great recipes!! I’m new to your site, but love everything about it! That being said, I was recently diagnosed with Endometriosis. Rather than take pills or have surgery, my midwife has agreed to let me try the Endo Diet, which is very similar to the Paleo Diet, except I can’t have red meats or eggs. FYI, The Paleo Kitchen cookbook has a mayo recipe that is SOOOO much easier…you take 3/4 cut oil of your choice, 1 egg, lemon juice(1 tsp I think), and 1 Tbsp Dijon mustard, place them in a tall, narrow container, and use an immersion blender! Start at the bottom and move the blender upward as the ingredients emulsify. I had quit making my own mayo because the other way was SO time consuming and mine never seemed to come out right, but this version is pretty fool-proof! I use grapeseed oil because the olive oil is a bit bitter for me.

Kirsty, with animal protein I’m a pretty picky. I buy at butchers where I trust in the quality. In my opinion there is a huge difference in taste and quality when it comes to animal protein. Grains and veggies I’m more lenient but never with animal protein. The cheapest way to get high quality meat is share a whole animal with friends or neighbors. The bacon we eat is from a pig I share with another 2 families. Once a year I get 1/3 and freeze it all. The bacon is incomparable to any grocery store bacon. I’d rather it less often.

I am doing a low carbohydrate (but not totally Paleo) diet. There are a lot of great recipes in this book. I've already made about half a dozen of the meat dishes, several of the veggies and a dessert. The book is well laid out and truly has a wide variety of types of dishes. I've purchased several of these types of cookbooks, and by far this one is the best. Several co-workers have already ordered their own after looking through mine.
