Kirsty, with animal protein I’m a pretty picky. I buy at butchers where I trust in the quality. In my opinion there is a huge difference in taste and quality when it comes to animal protein. Grains and veggies I’m more lenient but never with animal protein. The cheapest way to get high quality meat is share a whole animal with friends or neighbors. The bacon we eat is from a pig I share with another 2 families. Once a year I get 1/3 and freeze it all. The bacon is incomparable to any grocery store bacon. I’d rather it less often.

FYI, The Paleo Kitchen cookbook has a mayo recipe that is SOOOO much easier…you take 3/4 cut oil of your choice, 1 egg, lemon juice(1 tsp I think), and 1 Tbsp Dijon mustard, place them in a tall, narrow container, and use an immersion blender! Start at the bottom and move the blender upward as the ingredients emulsify. I had quit making my own mayo because the other way was SO time consuming and mine never seemed to come out right, but this version is pretty fool-proof! I use grapeseed oil because the olive oil is a bit bitter for me.
I there, I’m cooking for my friend who has secondary cancer and has strict guidelines on what she can eat. She told me that it’s pretty much Paleo how she been advice to eat. Hey Tessa! Good question. So after calculating from my credit card, I spend about $275 on average on food without really budgeting. I stick to eggs and chicken as my main form of protein and look for when grassfed beef is on sale. Even at $7 a pound I can get about 3 meals out of that, so it’s not too bad. I will probably be doing a post on this in the next few months when I get back to school and am keeping track of exactly how much I spend on what.
I had never heard of the Paleo diet before I read this book but as a Mexican Cookbook it is really good. There are the recipes you would expect to see - empanadas, enchiladas, fajitas and such plus many recipes I have never seen before. There are lots of yummy looking recipes that I will be trying out. I am especially looking forward to trying the Salted Chocolate Ganache Tarts!

Nevertheless, this is one paleo cookbook that slightly varies the diet. In particular, the author’s definition of paleo includes both potatoes and rice. There is a coherent argument provided for why this is the case and many paleo followers do agree. Still, the decision won’t sit well with everybody on a paleo diet, so it is something to bear in mind.

It was time well spent though. Taking time away from all your devices and things that compete for your time is extremely helpful and allows this space to think that you might not otherwise get. I highly recommend you do this if you can. It doesn't have to be on a beach either – your couch is a perfectly good place to do this, but with the tv off and your phone in another room. (This is also different than meditation. Meditation is trying to achieve the absence of thought, this encourages thought.)

I absolutely despise regular mayo, and I love this recipe. If you aren’t a big fan of chicken salad, this might not be the first recipe to start; although the flavor is pretty mild. Paleo mayo becomes 30 secs in the making and SUPER EASY if you have an immersion blender! It was well worth my $15!! Just put all the ingredients you listed including the oil in a large mouth pint and a half mason jar put the blender to the bottom and blend! There is a video online somewhere. The mild flavor of spinach makes it wonderfully adaptable to sizzling garlic and spice from the crushed red pepper. For fullest flavor, cook spinach only until it begins to turn limp. Sautéed spinach can be made in a snap and pairs perfectly with almost every protein. If you have leftover spinach on hand or any wilting leafy greens, sautéing with a little olive oil and garlic instantly brings it back to life. Starting aromatics in a cold skillet lets them infuse the oil. The garlic also has less chance of burning. Let cooked potatoes dry out so they'll be extra crispy in the hash. Leftover cooked potatoes would be even better. Ground chicken has a touch more fat than ground chicken breast, key for more flavorful hash. Serve with Sautéed Spinach with Garlic and Red Pepper.

This is the worst cook book I have ever bought. Every recipe I have tried so far has had errors. It will either give a list of ingredients and then fail to tell you what to do with one of them or like the one i am cooking right now...it tells you to roast the chicken at 475 for 25 minutes and then reduce the temperature and continue to cook 45 minutes....ummmm what temp should a person reduce it to? Good thing I consider myself a good cook and know what a whole chicken bakes nicely at. But for some people this could be really frustrating and it is for me when I am in a hurry to make a meal for my family. Buyer beware. Im sure there are better Paleo cookbooks out there.
